Last Call: 3 Cocktail Recipes to Celebrate the End of Summer

While the autumnal equinox is still a month away, most count Labor Day Weekend as the official end of summer. It’s the time of year our palates turn towards warm soups simmering on the stove, pumpkin spice everything and toasty Hot Toddys.

But we don’t have to bid farewell to the fun flavors of summer-perfect cocktails quite yet. There’s still time to savor the fruity, spicy and, sometimes, quite simple drinks we love to imbibe while the sun is high in the sky. Kitschy Tiki-inspired cocktails are still fun to whip up for your friends, as are uplifting vodka-and-berry recipes and stimulatingly spicy tequila tipples. With that in mind, here are three bartender-approved recipes—one of each kind—so you can properly cheers the last gasps of the summer season.

Grey Goose East Breeze

1.5 oz Grey Goose Vodka
1 oz St-Germain
.75 oz fresh lemon juice
.5 oz fresh blackberry puree
Shake all ingredients in a cocktail shaker and strain into a coup or martini glass. Garnish with mint sprig.

Pink Paloma

(Recipe from Sea Wolf  in Brooklyn.)
1.5 oz tequila blanco
.5 oz Vedrenne Grapefruit Liqueur
.75 oz grapefruit juice
.5 oz lime juice
.25 oz simple
2 dashes Angostura bitters
Combine all ingredients in a shaker. Shake and pour over fresh ice in a glass with a salted rim before topping with soda and garnish with a lime wheel.

Venezuela Colada

1.5 oz Santa Teresa 1796 Rum
.5 oz Mr. Black Cold Brew Coffee Liqueur
.5 oz Chinola Passion Fruit Liqueur
1 oz coconut milk syrup
.75 oz pineapple juice
.5 oz lime juice
1 dash absinthe
Combine all ingredients in a shaker and whip-shake; pour over pebbled or crushed ice. Garnish with mint.
