This is a great way to turn your side of rice into a dazzling dish in and of itself. This is also a great way to integrate chanterelles, a delicate summer mushroom, into a dish.
What You’ll Need:
Short grain brown rice or white arborio rice
Cook rice as per directions.
Chop one onion and two two cloves of garlic.
In a separate pan, sauté onion and garlic with half a stick of butter.
Chop half a cup of almonds and a cup of chanterelles.
Add mushrooms and nuts to onions and garlic.
Pour mixture over cooked rice.
Chop a handful of parsley and add to rice mixture.
Cover, and let sit for about an hour, so that flavors meld together.
Serve and enjoy!
