Bourbon + Peach Cocktail

National Bourbon Heritage Month is in full swing, which means I’ve had plenty of time to work on some heightened cocktails. This one in particular includes my very first attempt at making my own simple syrup. I used mealy peaches to create a simple syrup perfect for early fall cocktails.

What you’ll need:
2 peaches, thinly sliced and pitted
1/2 cup turbinado sugar
1 cup water

Add all of the ingredients to a small pot. Bring to a boil and stir. Break up the peaches with a spoon and continue to stir.

Let simmer and stir every five minutes for about 20 minutes.

Strain into a small bottle and refrigerate before use.

What you’ll need:
2 oz whisky
2 oz grapefruit juice
1/2 tsp peach syrup

Combine the whisky, grapefruit juice, and syrup in a cocktail shaker. Add ice and shake well. Strain over ice into a rocks glass.
