Brunch in the summer is a little bit of a different game than brunch in the colder months. People are still looking to enjoy one of the best meals of the week, but summertime means those same people are likely not looking to indulge.
Serve up these sweet and savory watermelon bites and your guests will feel indulged without regret. Let your guests fill up on these and then follow with egg white omelettes in order to err on the side of lighter fare.
These go quite well with wine spritzers and can also be served as an amuse bouche or appetizer for dinner parties.
What you’ll need:
3 cups watermelon, cubed
1 cup feta
1 cup blueberries
Plate the watermelon cubes. Top each cube with a piece of feta. Then, drizzle the balsamic vinegar over the feta and place a blueberry atop the feta. Secure with a toothpick.
