After a long and cold winter it seems spring is finally here. Of course, for many this means it’s the time of year to stop screwing around and get serious about fitness. Swimsuit season is just a few short months away. So, this brunch option for protein pancakes instead of traditional pancakes. Maybe even skip out on the maple syrup altogether.
What you’ll need:
1 scoop vanilla whey protein powder
1 tsp baking powder
1/4 cup plain nonfat Greek yogurt
1/4 cup nonfat cottage cheese
2 tbsp almond milk
1 banana, sliced
1 tbsp honey
Combine the protein powder and baking powder together in a bowl. In a separate bowl, beat the eggs before stirring in the yogurt and milk. Pour the wet ingredients into the dry ingredients and whisk together to create the batter.
Heat some margarine in a skillet and spoon the batter in. When the pancakes start to bubble, flip them and cook until brown on both sides.
Plate the pancakes and serve with the banana slices and honey. Top with maple syrup to taste.
