Spicy Southwest Eggs

As much as I love a typical brunch, sometimes I like to switch it up a bit and put my own spin on a dish. This week, I made some spicy southwest eggs, which are a delicious way to sidestep from more classic brunch egg dishes.

What you’ll need:
2 egg whites
1 egg
1/2 chopped ripe avocado
1/2 chopped Campari tomato
1 tbsp guacamole
1 tbsp plain Greek yogurt
2 tbsp shredded Mexican cheese
Cholula sauce

In a large pan, cook the egg whites on low heat and add in the egg. Break up the yolk and mix the eggs together in the pan. Add the avocado, the guacamole, and the tomato and stir with a large spoon. After about 2 minutes, stir in the yogurt and cheese, then let it cook for another minute or so.

Serve on a plate and top with sriracha and a couple dashes of Cholula sauce. This dish goes well with a bloody Mary and some orange juice.
