Brunch can be simple and quick without losing the elements of indulgence. Bagels are one of my all-time favorite foods (no matter how unhealthy) and this recipe is one I forget about far too often.
What you’ll need:
2-3 slices smoked salmon
1 slice goat cheese
1 campari tomato
Carve out the doughy insides of the bagel. Butter the newly carved out areas with margarine. Cook the two slices in a pan on medium heat until lightly browned. Flip both slices over and add the cheese to one side and add the smoked salmon and tomato to the other. Once the cheese melts a bit, put the sandwich together and serve.
The strong flavors of the smoked salmon and goat cheese create a great pairing that’s perfect for brunch. Serve with a side of scrambled eggs (and mimosas).
