Gone are the days when cucumber sandwiches ruled brunch, but that doesn’t have to mean cucumbers are out altogether. This is especially true during the summer months when local cucumbers are available. I used a cucumber from my garden, but any fresh cucumber will do for these savory bites.
What you’ll need:
1 cup cucumber, chopped
1/4 cup smoked salmon, roughly chopped
1/3 cup cream cheese, whipped
1 tsp dill
Combine the salmon, cream cheese, and dill in a dish. Mix together with a fork until the salmon and dill are folded into the cream cheese.
Plate the cucumber pieces and top with the cream cheese mixture to serve.
