Single-Serve Oatmeal Cups

Instead of serving muffins or cupcakes this brunch, surprise your guests with these single-serve oatmeal cups. They are far healthier than muffins because they are eggless, flourless, and dairy free.

What you’ll need:
2 1/2 cups oats
1 overripe banana
2 tsp maple syrup
1/2 tsp salt
1/3 cup semi-sweet chocolate chips
1/4 cup dried cranberries
1 1/3 cups unsweetened almond milk
1 tbsp olive oil
1 tsp vanilla extract
1 packet single-serve instant coffee
Canola oil spray

Directions:
Preheat oven to 375.

Pour the dry ingredients in a large bowl and stir to combine. Put the wet ingredients in a separate bowl and add the mashed banana. Then, pour all of the wet ingredients into the bowl of dry ingredients and mix well.

Line a muffin tin with paper cups and dot the cups with canola oil spray. Fill each cup about 3/4 of the way with the batter and bake for 25 minutes.
