Single-Serve Frittata Cups

For large brunch gatherings it’s a great stress reliever to be able to prepare in advance. These single-serve frittata cups can be prepped and cooked before your guests arrive just as long as you keep them in the oven to stay warm.

What you’ll need:
1 1/3 cup egg whites
2 eggs
1 Campari tomato
2 sweet hot red peppers
1 cup spinach
1 Yukon gold potato
1/4 large white onion
1/4 cup feta

Directions:
Preheat oven to 350.

Pierce and cook the potato in the microwave for 2 minutes per side.

Whisk the eggs together in a large bowl.

Chop the tomatoes, spinach, potato, peppers, and onion. Add the vegetables into the bowl and stir. Add in the feta, stir, and spoon into the muffin cups.

Line a muffin tin with paper muffin cups. Spray the cups with Pam before filling them about 2/3 of the way with the egg mixture and bake for 25 minutes.

While these frittata cups are great for parties, they’ve also been a great way for me to prepare healthy breakfast for the week on a Sunday afternoon.
