Salmon, Egg, and Feta Sandwiches

If you’re throwing a brunch-themed party for New Year’s Day, these sandwiches are a great option to have prepared right before serving buffet-style. The combination of lox and egg is refreshingly different, yet traditional.

What you’ll need:
1 bagel
1 egg
2-3 slices smoked salmon
1/4 cup feta

Directions:
Toast the bagel and fry the egg in a little bit of olive oil.

Add the cheese to the egg once the egg is almost done. Take the egg out once the cheese is melted.

Serve the egg and cheese over the bagel and top with the salmon.

In this scenario, sunny side up or over easy is likely too runny. I suggest cooking the egg over hard unless your guests request runny eggs.

Garnish with black pepper.
