Protein Pancakes and Scramble

For those of us who love brunch, but don’t want to spend the calories on eating out or homemade brioche French toast, thankfully there are alternatives. If, like me, you have a big tub of protein powder, but you’re sick of protein shakes in your shaker bottle, then it’s time to learn to include protein powder in your meals.

What you’ll need:
1 egg
1/8 cup egg whites
1-2 scoops vanilla protein powder
1 small banana
1/4 cup almond milk
1 tbsp plain nonfat Greek yogurt

Directions for pancakes:
Whisk the egg, egg whites, almond milk, yogurt, and protein powder together in a bowl until it reaches a pancake batter-like consistency. Pour it into a pan and add slices of banana to each pancake. Cook each pancake until browned on both sides as you would cook regular pancakes. Serve with maple syrup.

Directions for scramble:
Whisk everything together, but leave out the banana altogether. Pour the liquid into the pan and cook as you would cook scrambled eggs. Serve as is or add turkey sausage or bacon.

The scramble is a bit easier to cook because the measurements don’t need to be quite so exact. I personally prefer the scramble because I somehow almost always manage to add too much egg and not enough powder.

Now you can splurge and have multiple mimosas.
