Protein Oat Pancakes

Over the last month or so I’ve included a fair share of booze into my Sunday Brunch routine, but for those looking to keep good habits—even on the weekends—it’s important to eat hearty meals even if it means staying home for brunch every now and then. These protein-packed oat pancakes are delicious and there’s not a bad ingredient in them. Plus, there’s no need for added sugar as there’s enough sweetness in the protein powder and almond milk.

What you’ll need:
1/2 scoop vanilla whey protein powder
1/4 cup oats
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup almond milk
1 tbsp olive oil
1 egg

Directions:
Whisk together the protein powder, oats, baking powder, baking soda, salt, almond milk, and egg.

Heat the oil in a saute pan or griddle and scoop the batter onto the pan with a tablespoon to make silver dollar pancakes. Fry until it bubbles and then flip and continue cooking until brown on both sides.

Serve with fruit, Greek yogurt, and/or maple syrup.
