Matzo Meal Pancakes

Passover begins tomorrow, which means for some it’s time to think about Kosher for Passover meals. These matzo meal pancakes are a bit fluffier and grainier in texture than flour pancakes, but every bit as delicious. If matzo brei is more to your liking, see last Sunday’s brunch recipe.

What you’ll need:
1/2 cup matzo meal
1/2 tsp salt
1 tsp Truvia
3 eggs
3/4 cup almond milk

Mix the matzo meal, salt, and Truvia in a bowl. In a separate bowl, beat the eggs and pour the almond milk. Mix the wet ingredients into the dry ingredients and let it stand for 15 minutes.

After 15 minutes, fry the pancakes on a skillet until browned on both sides. Top with cottage cheese, Greek yogurt, fruit preserves, or maple syrup and serve.
