Matzo Brei

Welcome to a special edition of Sunday Brunch here on Dish + Drink. Passover is just over a week away, which means no leavened bread for the duration of the holiday. While I don’t typically observe, my family and I like to make matzo brei in order to celebrate. Matzo brei is, in essence, basically just French toast without the leavened bread.

What you’ll need:
6 sheets matzo
3 eggs
1/2 cup egg whites
1/2 cup almond milk
Margarine

Directions:
Place the matzo in a large bowl and soak in warm water. Break the sheets up with your hands and place the bowl to the side.

While the matzo soaks, whisk together the eggs and egg whites. Pour in the milk and whisk again.

Once the matzo softens, pour the water out.

Heat the margarine in a large pan. Pour the matzo mixture into the pan and let cook until lightly browned and the eggs are set.

Serve with salt and pepper, maple syrup, or confectioner’s sugar.
