Mango Banana Nut Oatmeal

Weekend mornings in the winter have pretty much always meant oatmeal for me growing up. My mother is an oatmeal advocate because of its health benefits, but also because it can be a bit of a blank canvas in that you can add a wide variety of fruit, nuts, or spices to liven it up.

Serves 2.

What you’ll need:
1/2 cup regular oats
1/2 cup quick oats
1 cup almond milk
3/4 cup water
1 ripe banana, sliced
1/2 ripe mango, cubed
1/4 cup berries, dried
1/4 cup walnuts, chopped
1 tsp cinnamon

Combine the oats, berries, cinnamon, almond milk, and water in a small pot. Cook on medium heat for approximately 2-3 minutes.

Stir in the bananas and mango. Serve with an optional splash of half and half.

Oatmeal is filling, warming, and easy to cook in large batches making it perfectly suited for serving to the masses at your next brunch gathering.
