Deconstructed Tuna Melt

Tomorrow marks the start of Fitness Week here on BTR, so I thought I’d start us off with a protein-heavy brunch that’s easy on the fat and carb-free.

What you’ll need:
1 can solid white albacore tuna in water
1 egg
1/4 cup shredded cheddar
1 tbsp plain nonfat Greek yogurt
1 tsp relish

Directions:
Fry the egg over medium. Sprinkle the cheddar over the egg and let melt.

Strain and break up the tuna. Combine the tuna, egg, cheese, yogurt, and relish in a bowl. Mix thoroughly with a fork and continue breaking up the tuna. Serve as is.
