Brie and Peach Grilled Cheese

With fall approaching, it’s time to tweak a colder weather comfort food classic: grilled cheese. This post is inspired by a pretty tasty BuzzFeed article. Gourmet grilled cheeses can work for any meal, but I thought this one would be perfect for brunch.

What you’ll need:
2 slices raisin challah
Herbed brie
3-4 thin peach slices
1/4 cup chopped white onion
Blackberry reserves
Brown sugar
Kosher salt
Extra-virgin olive oil

First, caramelize the onions by cooking them in a small pan with olive oil, a dash of salt, and a dash of brown sugar until they are soft and brown. Set aside the onions.

Lightly butter one side of both slices of challah. Place the bread butter side down in the pan and top each slice with brie. Lightly coat the cheese on one slice with the preserves and lay the peach slices and onions on top. Put the other slice on top cheese side down to complete the sandwich.

Cook until the brie is runny and the peaches have softened.

You could also make challah french toast and use two slices for the sandwich.
