Latkes + Eggs

Normally, I’d say this recipe would go best with poached eggs rather than fried eggs. This is especially the case because poached eggs are a brunch staple, but it’s Hanukkah and the holiday is celebrated because of the miracle of lights. To pay homage to this miracle, Jews all over the world cook in oil as a symbol. So, fried eggs it is. As it turns out, this is damn good as is anyway. Happy Hanukkah!

What you’ll need:
2 butternut squash and sweet potato latkes
2 eggs
4 slices smoked salmon
Olive oil
Feta cheese
Black pepper

Directions:
Fry the eggs sunny side up in oil. Remove the eggs from heat and reheat the latkes until they are warm.


Plate the latkes and top with the smoked salmon. Lay the eggs over the salmon and add black pepper and feta cheese to taste. Split the yolks and serve.
