Poached Egg Toast

What is brunch without poached eggs? To me, it’s a sad breakfast (with cocktails). This recipe combines two of my favorites: avocado toast and poached eggs, not to mention the fact that it also contains smoked salmon, which is one of my top choice foods of all time. This is easy to make as long as you know how to poach an egg. If you don’t, learn here.

What you’ll need:
2 eggs
1 slice panella bread
2 slices smoked salmon
1/2 avocado
Feta cheese
Red pepper flakes

Poach the eggs.

While the eggs are poaching, toast the bread. Mash the avocado into the toast with a fork and lay the salmon over the avocado.

When the eggs are poached, lay them on top of the salmon. Sprinkle feta and red pepper flakes over to taste before serving.
