Waffle Sandwiches

Today is Valentine’s Day, but because not everybody celebrates I thought it best to come up with something everyone can enjoy with or without a significant other. These waffle sandwiches are sweet and perfect for dessert or an overindulgent breakfast. Cut them into hearts instead of halves if you’re feeling extra loving.

What you’ll need:
1/2 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp brown sugar
1 egg
1/4 cup almond milk
1/2 tsp flax seeds
Herbed goat cheese
Blackberry preserves
Maple syrup

Mix the flour, baking soda, salt, sugar, and flax seeds in a bowl. Beat the egg and add the almond milk to a separate bowl. Then, combine the wet and dry ingredients and whisk.

Cook the batter in a waffle iron, then generously spread the cheese and preserves over one waffle. Stack the waffles to make a sandwich and drizzle the maple syrup over the top and slice in half before serving.
