While in Florida, my parents and I stayed for a few days in a villa and did our own cooking for lunch and dinner. My mom accidentally bought a variation of canned tuna that we don’t like as much, but this sandwich definitely made up for the less desirable flavor.
What you’ll need:
1 can tuna
1 slice pepper jack cheese
2 slices multigrain bread
1 tbsp tomatillo salsa
1 tsp olive oil mayo
Drain the tuna and put it in a bowl. Mix in the mayonnaise with a fork while breaking up the tuna. Stir in the salsa and refrigerate for about 15-20 minutes.
Fry the egg over easy in a skillet and toast the bread.
Put the tuna on the bread, add the cheese, and top with the egg. Slice the sandwich in half to let the yolk run just a bit and serve.
