Tomatillo and Habanero Guacamole

In gearing up for Cinco de Mayo, one of the most important dishes to have in your cache is guacamole. Making good guacamole is not terribly difficult, but what makes great guacamole is knowing that you can add almost anything you want in order to boost the flavor without changing what people love about it.

What you’ll need:
8 tomatillos
1 habanero pepper
1/2 large Spanish onion
1 tsp cilantro, dried
1 tsp garlic, chopped
1/2 lime
1/2 avocado

Husk and rinse the tomatillos in hot water. Grill the tomatillos, the pepper, and the onion together until soft and charred.

Put the grilled vegetables in a food processor. Add in the cilantro and garlic. Juice the lime into the processor and process until it reaches a salsa-like consistency. Pour everything into a bowl and mix in the avocado before serving with lime tortilla chips.
