Thai Chili Grilled Swordfish

Swordfish is both easy to grill and healthy because of its high lean protein content. I know many people aren’t too keen on fish, but swordfish is far meatier and far less “fishy” tasting than most of its counterparts. In fact, when seasoned right and grilled to perfection it tastes fairly similar to turkey, I think. The thicker the swordfish, the less likely your fish-hating guests will complain.

What you’ll need:
1 1/2 lbs swordfish
2 tbsp Thai red chili paste
2 tbsp olive oil
1 tsp cumin, dried
1 tsp garlic, chopped

In a small bowl, mix together the chili paste, olive oil, cumin, and garlic until it forms into a paste. Brush the paste over the fish and let it marinate for about an hour before grilling.

Grill for 6 minutes per side. If a knife goes through with no resistance, the fish is done. Plate and serve.
