Sweet and Spicy Chicken Salad

When the options are tuna or chicken salad, I almost always choose tuna. But because chicken salad is blander than tuna, it allows for more experimentation. In an attempt to make sweet and spicy chicken salad, I combined cayenne pepper and maple syrup. As it turns out, this is a chicken salad I can get behind.

What you’ll need:
1 1/2 cups canned chicken breast
2 tsp mayo
1 tsp maple syrup
1/8 cup cranberries
1/4 tsp cayenne pepper

Drain the chicken and place it in a mixing bowl. Add the mayo and maple syrup and mix well with a fork, while breaking up the chicken. Then, sprinkle in the pepper and fold in the cranberries before serving.
