Yesterday’s recipe was a slightly updated version of classic crab salad, so it seems only natural for today’s recipe to be an updated version of chicken salad. I’ve been looking for an excuse to make my own spicy mayo for something other than sushi, but forgot about it until this weekend. The addition of the mayo in this dish makes it far more flavorful than your grandmother’s chicken salad.
What you’ll need for the spicy mayo:
2 tbsp olive oil mayo
1 tsp sriracha
1/2 tsp fresh squeezed lime juice
Combine in a small dish and stir with fork.
What you’ll need for the salad:
12 oz chunk chicken breast
2 stalks celery, chopped
6 grape tomatoes, chopped
Drain the chicken and place it in a mixing bowl. Mix the celery, tomatoes, and chicken together using a fork. Add in the mayo and stir well to combine. Add in the black pepper to taste and serve.
