Spicy Corn Side

Personally, I find that I tire less quickly of main dishes than I do of side dishes. It can sometimes be difficult to focus on creativity while also trying to serve up healthy meal after healthy meal. This recipe for a corn side dish isn’t award-winningly creative, but it is different enough to make me feel like I’m indulging in something a bit more fun.

Serves 4.

What you’ll need:
3 ears corn
1 serrano chili
1 cup onion, chopped
1 tbsp extra-virgin olive oil
Onion powder
Garlic powder

Grill the corn and serrano until they become charred on all sides. Husk the corn and slice it off the cob. Chop the serrano.

Heat olive oil and sauté the onions until translucent. Add in the corn and pepper and sauté it all together. Stir as it cooks with a large spoon. Sprinkle in a dash each of onion powder and garlic powder. Stir and serve.
