Recently, I’ve been craving fried chicken, but because I’m doing my best to focus more on healthy habits for spring I wanted to steer clear of the calories and high fat. Instead, I made oven “fried” chicken, which truly tastes just as good and contains far less carbohydrates and fat.
What you’ll need:
1 chicken, cut up
1 1/2 cups breadcrumbs
2 tbsp Penzey’s southwest seasoning
1 tbsp Adobo seasoning
1/2 cup canola oil
Preheat oven to 375.
Pour the oil into the bottom of the roasting pan. Set the chicken in the pan and coat it in the oil.
Put the breadcrumbs in a bowl and add the seasonings. Dredge the chicken in the dry mixture one piece at a time.
Place the pieces of chicken back into the pan skin side down. Bake for 30 minutes, then flip the chicken and bake for 30 more minutes before serving.
