Shrimp Scampi in Spaghetti

Shrimp scampi is an Italian-American favorite; somehow even “bad” scampi tastes pretty decent, it’s simple to make, and it requires mostly only household ingredients. Growing up, I was absolutely not a spaghetti fan, but scampi and spaghetti is a must.

What you’ll need:
1 1/2 lbs Argentine red shrimp
6 cloves garlic, minced
3 tbsp olive oil
Juice of 1 lemon
1/2 cup dry white wine
1 tbsp parsley, dried
1 lb thin spaghetti

Boil the pasta and save the pasta water.

While pasta is cooking, saute the garlic in the olive oil in a large skillet. When the garlic is soft, add the shrimp and cook for approximately 2 minutes on a side or until pink on both sides. Stir in the lemon juice, wine, and parsley.

When the pasta is finished, add it into the pan and add pasta water as needed to reach desired consistency before serving.
