Salad Nicoise Sandwich

Salad nicoise has been a family favorite in my house for years for the simple reasons that it is easy to throw together and it offers a light, but protein-packed healthy meal. Of course, that doesn’t mean you have to cut out carbohydrates 100 percent of the time. This recipe combines the need for a healthy meal without foregoing what you really want: bread.

What you’ll need:
1 egg, hardboiled
1/4 cup canned salmon
1/4 cup canned tuna
1/4 cup mixed greens
2 sweet hot red peppers, sliced
2 olives, assorted
2 cherry tomatoes, sliced
1 onion roll
Lemon wedge

Toast the roll and lay the mixed greens on the bottom half. Top with the greens, egg, tuna, and salmon. Squeeze the lemon juice over this half of the sandwich.

Place the olives, tomatoes, and peppers on the other slice of bread and serve.
