Patty Pan Squash and Purple Potatoes

I’m always looking for more ways to love my potatoes as well as get more veggies in my diet, so sautéing everything together is a great option for all seasons.

Serves 3.

What you’ll need:
2 patty pan squashes
12 purple fingerling potatoes
1/2 large Spanish onion
2 dried red chili peppers
1/3 cup extra virgin olive oil
1 tsp Penzey’s Mural of Flavor

In a large sauté pan, pour in the oil, then cook the onions and peppers until the onions are soft and transparent. From there, add in the squash, potatoes, and seasoning. Cook for another 10 minutes or so. Stir with a large spoon every few minutes to be sure that everything cooks evenly.

This side pairs well with skirt steak, meatier fish like swordfish or salmon, and chicken. Thankfully, this is a quick and filling recipe, so it’s great when you’re looking for something heartier to add to your meal.
