Trader Joe’s is a great place to shop for fish and seafood. Their seafood blend is especially versatile and can be used in a wide variety of dishes. While I usually serve the blend over pasta, it also goes well with white beans and swiss chard.
What you’ll need:
1 lb bag of Trader Joe’s seafood blend (calamari, baby shrimp, and bay scallops)
1 large bunch of swiss chard
1 cup small white beans, dry
6 cloves garlic
8 Campari tomatoes
3 tbsp extra-virgin olive oil
2 hot cherry bombs
6 cups water
Cook the beans and the water in a pressure cooker for approximately 45 minutes or until beans are softened.
While the beans are cooking, wash and chop the swiss chard and discard the stems. Chop the garlic, pepper, and tomatoes. Rinse and drain the seafood.
When the beans are finished cooking, saute the garlic and peppers for approximately 5 minutes or until soft. Add in the tomatoes and stir with a large spoon. Cook for about 10 minutes before adding the swiss chard and beans. Pour in the liquid from the pressure cooker as well. Stir in the seafood blend and cook for 5 more minutes on medium-high heat.
If you need to use a can of small white beans, add 2 cups of chicken stock when cooking the beans.
