In most instances, I will often choose a sandwich over a salad, but I do enjoy the occasional Greek or Mediterranean-inspired salad. This sandwich is definitely inspired by the popularized Mediterranean diet, but it certainly won’t taste like diet food.
What you’ll need:
2 slices multigrain bread
1/2 cup fresh spinach
1/4 cup kalamata olives, sliced
1/4 cup feta cheese
In a saute pan, fry the egg in olive oil over hard. Once the egg is fried, remove it and place the spinach in the pan. Add more oil if necessary and cook the spinach until it wilts. This should only take a minute.
Place the egg on one slice of bread and top with the olives. Spread the avocado on the other slice of bread. Then, top with the spinach and feta. Put the sandwich together and slice in half before serving.
