Mediterranean Egg Pasta

Sometimes I feel a bit lazy when I’m cooking dinner, especially when I’m only cooking for myself. I was in the mood for plain pasta a few nights ago, so the spinach and olives were an afterthought when I decided to add the egg for protein. With these few extra ingredients, my pasta with cheese became a far more interesting dish without too much extra work.

What you’ll need:
1 cup assorted pasta
1 egg
1/2 cup spinach
1/4 cup kalamata olives
Pecorino romano cheese
Red pepper flakes
Olive oil

Cook the pasta.

While the pasta is cooking, fry the egg over easy in a pan with some olive oil. When the egg is almost finished, add the spinach to the pan and let it wilt.

Drain the pasta and put it in a bowl. Top with the egg and spinach. Sprinkle in the kalamata olives as well as the cheese and red pepper flakes to taste. Drizzle a desired amount of olive oil over the pasta and egg before serving.
