The idea for this recipe is courtesy of the first lady of BTR, who made these herself using her own mashed potato recipe. Thankfully, I also recently made mashed potatoes, so these latkes were made with leftover spinach mashed potatoes.
What you’ll need:
2 1/2 tbsp matzo meal
1/4 cup egg whites
1 cup spinach mashed potatoes
Extra-virgin olive oil
Combine the egg and egg whites in a mixing bowl and whisk together. Put the matzo meal in a separate bowl.
Heat a generous amount of olive oil in a small skillet.
Make tablespoon-sized balls of the mashed potatoes and set aside.
When the oil is hot, dip each ball first in the egg wash and then into the matzo meal using your hands. Then, place the ball onto the skillet and pat down using a spoon or spatula to form patties.
Cook until brown on each side and serve.
