Cooking at home doesn’t have to mean curating something elaborate or slaving over the stove for hours. What I like about this chicken recipe is that it tastes like it takes longer than it does to make, but it’s simple and requires only a small handful of ingredients.
What you’ll need:
1 1/2 lbs thin sliced chicken
2 tbsp olive oil
1 jar mango salsa
All-purpose flour for dredging
Preheat oven to 170.
Put the flour and chicken in a plastic bag and shake to coat.
Heat the oil over medium-high heat in a large pan. Cook the chicken in batches for approximately 5 minutes on a side.
Place the finished batches of chicken in a baking dish in the oven to keep warm.
When all of the chicken is in the oven, add the salsa to the pan. Cook on medium heat for a few minutes so the salsa becomes a bit more sauce-like.
Serve the chicken on a plate and top with the salsa.
