One of my favorite breakfast dishes is huevos rancheros, but I don’t eat it as often as I’d like to. Part of my reasoning for that is because huevos rancheros typically calls for tortilla, but I’ve learned that throwing all of the other ingredients together in a skillet and adding a little bit of guacamole instead of extra tomatoes and chilies makes it just as filling without the tortilla.
What you’ll need for the guacamole:
1/4 white onion, minced
1 tbsp hot salsa
1/2 tbsp dried cilantro
Juice of 1/4 lime
What you’ll need for the huevos rancheros skillet:
1/4 white onion, chopped
1/2 tsp garlic, crushed
1/2 cup guacamole
1/2 cup Pomi
1/4 cup shredded cheese
Red pepper flakes
Combine the ingredients for the guacamole. Mash avocado with a fork and mix thoroughly.
In a small skillet, saute the garlic and onion in some olive oil. When the onions are translucent, add in the Pomi and the guacamole. Stir to combine and let cook down for a minute or so.
Make space in the sauce for the eggs and crack them in. Cover and let cook for another 2 minutes. Then, uncover and sprinkle the cheese on top. Cover and cook until the cheese melts.
Add in the red pepper flakes to taste before serving.
