Homemade Grilled Chicken Rub

Grilling chicken doesn’t always have to mean taking the easy way out. I’m a big fan of grilled chicken in the summer, but I can grow quite tired of using the same bottled marinades over and over. While today’s homemade rub is still simple enough to make, I feel far more accomplished when making my own rubs and marinades. 

What you’ll need:
3 breasts chicken
1 tbsp adobo seasoning
1 tbsp smoked Spanish paprika
1 tbsp Florida seasoned pepper
1 tbsp garlic
2 1/2 tbsp white balsamic
2 1/2 tbsp Spanish olive oil
1/8 cup coarse salt
4 cups water

First, trim and pound the chicken. Brine the chicken by dissolving 1/8 cup coarse salt in 4 cups water. Put the chicken and liquid in a ziplock bag and let sit in the fridge for 30 mins.

After 30 mins of brining, pour out the liquid and drain the chicken on paper towels. Pour the adobo, smoked Spanish paprika, Florida seasoned pepper, garlic, white balsamic, and Spanish olive oil into a small bowl and mix into a paste. This will be the rub for the chicken. With your hands, spread the rub around on both sides each chicken breast. Grill!

Serve under salad for a simple and extra-summery chicken milanese.
