Habanero Tomatillo Guacamole

Even though I’m a lover of spicy food and hot peppers, growing habanero peppers often means having more than I can use at any given time. They are so overwhelmingly hot that it’s difficult to find a bearable recipe to use just one pepper. The avocado base in this guacamole recipe cuts the dry heat from the salsa, making it a delicious excuse for a habanero.

What you’ll need:
8 tomatillos
1 habanero pepper
1/2 large Spanish onion
1 tsp cilantro, dried
1 tsp garlic, chopped
1/2 lime
1 avocado

Directions:
Husk and rinse the tomatillos in hot water. Grill the tomatillos, the pepper, and the onion together until soft and charred.

Put the grilled vegetables in a food processor. Add in the cilantro and garlic. Juice the lime into the processor. Process until it reaches the desired consistency. Mix in the avocado and serve.
