What you’ll need:
1 tbsp peanut oil
2 mangoes, peeled
1/2 cup white onion, chopped
1/2 cup baby carrots, chopped
2 habanero peppers
1/2 cup white vinegar
1/2 cup ketchup
3 sweet hot red peppers
1/4 cup fresh-squeezed lime juice
1/4 cup water
Slice the mangoes and the peppers.
Saute the onion, carrots, and peppers in a large pan in the peanut oil. Cook until the onions are soft and translucent. Then add in the mangoes, ketchup, and vinegar.
Cook on low heat for about 25-30 minutes and let cool.
Once the ingredients cool, pulse them in a blender with the water and lime juice. Strain and refrigerate in a glass jar for at least 2-3 hours before using.
This sauce works great on a burger, especially spinach and chicken burgers. More inspiration and pairings to come.
