Grilled Lemon Rosemary Halibut

Unfortunately, halibut is a bit on the expensive side when it comes to fish, at least more so than the majority of the ones I like to cook. Halibut is also one of my favorites, so whenever I can get my hands on it for a reasonable price, I do so, especially during grilling season.

Serves 3.

What you’ll need:
3 filets halibut
1/8 tsp cayenne pepper
1/4 cup olive oil
1 dozen capers
1/2 cup fresh squeezed lemon juice
2 tsp chopped garlic
3 sprigs fresh rosemary

Roughly chop the rosemary and place it in the bottom of a jar. Add in the olive oil, lemon juice, capers, garlic, and cayenne pepper. Shake well and let sit for about 15 minutes.

Then, place the halibut filets in a glass dish and pour the marinade over the fish. Marinade the fish for 1 hour before grilling and serving.
