Grilled Barramundi Filets

I’ve been doing a ton of barbecuing lately, but when it rains I have to have a back-up plan. Originally, I intended to grill some barramundi filets, but had to cook them in a pan instead. This was my first time trying barramundi and, like most of the fish I eat, it’s meaty rather than fishy so there’s no reason to shy away.

What you’ll need:
1 1/2 lbs barramundi filets
3 tbsp margarine
Juice of 1 lemon
1 tsp berbere seasoning
1/2 cup dry white wine

Heat the margarine in a pan. Once the margarine melts, cook the fish for 3-4 minutes per side. Pour in the lemon juice, wine, and berbere. Cook for 1 minute and plate the fish. Spoon the sauce over the fish to serve.
