Greyhound Baked Chicken

The last several weeks here in the New York metropolitan area have been packed with constant snowfall, which has made everything a bit more difficult. With that in mind, I thought I’d bake a chicken with a little more zing to it in order to get us all through this last stretch of winter: chicken drenched in booze.

What you’ll need:
1 chicken, cut up
1/2 cup greyhound
1/4 cup olive oil
1 lemon
3 sprigs rosemary
1 tsp poultry seasoning
1 tsp Florida seasoned pepper
2 tsp garlic, chopped

Whisk together the greyhound, olive oil, juice of the lemon, rosemary, seasoning, and garlic in a measuring cup. Save the lemon slices.

Put the chicken in a bag and pour in the marinade. Let sit for 45 minutes to an hour.

Preheat oven to 400.

Put all the chicken into a large baking pan and pour the marinade over it. Garnish with the slices of lemon. Bake for 30-45 minutes and serve.
