Graham Cracker Chocolate Chip Mug Cookies

It’s only on rare occasions that I’ll indulge in dessert, not because I don’t love sweets, but because I’m usually a bit too impatient to be bothered baking something. Thankfully, microwaves allow for moist personal chocolate chip cookies in under 10 minutes, preparation time included.

Makes 2 mug cookies.

What you’ll need:
2 tbsp margarine
2 tbsp granulated sugar
1 tbsp light brown sugar
1 tbsp dark brown sugar
1/4 tsp vanilla extract
1/8 tsp kosher salt
2 eggs, separated
6 tbsp whole wheat flour
Chocolate chips
Graham crackers, crushed

Take out 2 microwave safe mugs. Place 1 tablespoon of margarine in the bottom of each mug and melt in the microwave for about 10 seconds.

Divide up the sugar, salt, and vanilla and add half of each to the mugs. Stir with a spoon and add 1 egg yolk to each mug. Stir again until the yolk is broken up and pour in the flour. Stir in the chocolate chips and graham crackers.

Microwave in 30 second bursts until the cookie rises a bit. The inclusion of whole wheat flour means this cookie will come out fairly dense and will mostly likely not rise to the top of the mug. That’s okay, just be sure to place a knife or toothpick through the cookie to ensure that it’s cooked through before removing from the microwave.

Top with whipped cream and additional graham cracker dust and serve.
