Feta-Stuffed Tomatoes

This recipe for stuffed tomatoes is both simple and versatile. It takes about 25 minutes total to prepare and cook them, but the work is minimal and yields a delicious appetizer that can be paired with almost anything else you might serve at a cocktail party.

What you’ll need:
4-8 Campari tomatoes
Feta
Oregano
Black Pepper
Extra-virgin olive oil
Garlic powder

Directions:
Preheat toaster oven to 350.

Rinse each tomato and slice off the tops. Use a grapefruit spoon to carve out the insides of each tomato.

Fill the tomatoes with feta until each tomato is about 3/4 full. Pour just a dab of olive oil over the feta and top with a sprinkle each of garlic powder, black pepper, and oregano.

Bake for about 15-20 minutes.
