Feta and Broccoli Rabe Chicken Burgers

One of the best alternatives to a standard beef burger is a chicken burger, but it’s best to know exactly what goes into your burgers even if you’re opting for a leaner meat. These chicken burgers are quite simple to make and are high in protein as well as low in fat.

What you’ll need:
1 lb ground chicken
2 eggs
1 cup broccoli rabe leaves
1 cup breadcrumbs
2 tbsp fat free feta
1 tsp adobo seasoning
1 tsp garlic powder
1 tsp Florida seasoned pepper
1 tsp onion powder

Boil the broccoli rabe for about 2 minutes.

In a bowl, whisk the eggs with a fork and add in the chicken. Mix together until the chicken is roughly broken up and coated in the eggs. Pour in the feta, half of the breadcrumbs, and seasoning. Stir and then fold in the broccoli rabe.

Line a glass plate with waxed paper. Coat the paper with half of the remaining breadcrumbs. Then, make patties out of the mixture with your hands and place on the plate.

Sprinkle the remaining breadcrumbs over the patties and place another sheet of waxed paper on top. Press down lightly and refrigerate for at least 1 hour. To cook the burgers, either grill or pan saute them.
