In the spirit of getting back on track post-MDW BBQS (which I absolutely need to do), I made a healthy and simple protein-packed sandwich for lunch yesterday with just four ingredients.
What you’ll need:
1 sauté pan
½ cup egg whites or 2 large eggs
2 slices smoked salmon
2 slices seedless rye bread
First, cook the eggs in the sauté pan. When the eggs are almost done, put the bread in the toaster. Once the eggs are done and the toast is ready, put the eggs on one slice of toast. Top with the smoked salmon and spread a couple of dashes of sriracha over it. Eat and enjoy!
What I love about this sandwich is that it’s so simple to make. The preparation and cook time takes all of about 10 minutes total, which is great when I’m in a hurry and still trying to eat something filling and nutritious.
More than the easy to make factor, though, is just how fueling and healthy it is. The rye bread I use is quite low in calories as are the egg whites. I pretty much don’t eat regular eggs anymore because they’re high in fat, but egg whites are so good for our bodies that I eat them often. Salmon is extremely healthy as it is high in protein and low in calories as well. The sriracha is zero calories and adds enough kick and flavor in combination with the natural sodium in the salmon that I don’t feel like I’m missing out on anything even though this sandwich lacks cheese.
If I had ripe Campari tomatoes and avocados, I would have cooked them into the egg whites for some added nutrition, but the sandwich as is tastes great. Feel free, however, to add them on your own with some onion and chive!
