After a busy week, sometimes the best kind of salad is the no frills kind of salad. This one is simple to put together and utilizes summer vegetables. What’s great about this salad in particular is that it tastes wonderful and light on its own, but can also work as a base layer for anything else you would like to include. In keeping with the flavor and the season, I would suggest grilled shrimp, chicken, or calamari if you need some additional protein.
What you’ll need:
3 cucumbers, peeled and chopped
1 large heirloom tomato, chopped
Green part of 3 scallions, chopped
1 dozen spicy green olives, quartered
6 sweet hot red peppers, quartered
2 tsp feta
3 sprigs basil
1/2 cup white balsamic vinaigrette
In a large bowl, combine the cucumbers, tomato, scallion, olives, and red peppers. Pour in the vinaigrette, add the feta, and stir with a large spoon. Garnish with the basil.
