Cranberry Walnut Biscotti

It seems Christmas has come faster this year than in recent years’ past. If you are struggling with last minute desserts, look no further. Biscotti is far simpler than it seems, though it does take an hour to bake. The prep work is practically mindless, so while this bakes you’ll have time to do prep work for other dishes.

What you’ll need:
1 cup sugar
3 eggs
3/4 canola oil
1 tsp vanilla
1 tsp cinnamon
1 tsp baking powder
3 oz dried cranberries
3 oz crushed walnuts
1 tsp orange zest
3 cups flour

Preheat the oven to 350. 

In a bowl, mix the sugar, eggs, and oil with a fork.

Add in the vanilla, cinnamon, baking powder, nuts, cranberries, and zest. 

Then, add in the flour. 

Coat hands with olive oil and make into a log. Place the log on a parchment paper-covered cookie sheet and bake for 30 minutes.

Slice the dough diagonally and bake for an additional 30 minutes. Let cool.
