Cranberry Banana Cake

April is here, but that doesn’t mean we need to totally kick our sweet tooth to eliminate the winter weight. This cranberry banana cake contains some healthy alternatives and is as moist as banana bread, making it a great breakfast food when paired with Greek yogurt.

What you’ll need:
1 cup unbleached flour
3/4 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup margarine
1/2 cup turbinado sugar
2 eggs
3 bananas
1 cup fresh cranberries
1/2 cup raisins

Preheat oven to 350.

Sift together the flour, baking powder, baking soda, and salt.

In a separate bowl, cream the margarine and sugar. Add in the eggs one at a time and cream together.

Mash the bananas. Then, add the dry ingredients into the wet ingredients alternating between the bananas and dry. Fold in the cranberries and raisins and bake for about 45 minutes.
